Day One
Theory session on what tempering is and why it's important
Colored cocoa butter use and technique
Introduction to airbrushing
Painting & sponge styles, including finger painting and splats
Tempering chocolate styles and techniques
Shelling, theory on shell integrity and edge formation
There is also a 12:30 PM - 1:00 PM lunch break.
A hands-on session from 1:00 PM - 4:30 PM covering a complete explanation of airbrushing techniques, hands-on airbrushing, painting, and decorating, as well as individually shelling moulds.
Day Two
Fillings class
One caramel mix and discussion on its variations/alternatives
One dark chocolate ganache demo, formulation, and emulsifying ganache
Shelf-life
Filling the moulds & shells from the day before, leaving to crystallize
There is also a 12:30 PM - 1:00 PM lunch break, and a hands-on session from 1:00 PM - 4:30 PM covering topics like tempering chocolate, seeding, Mycryo or silk, capping chocolate, changing textures and converting fillings to alternative flavours/tastes, and turing out chocolate.
