These KoKo Pearls are designed specifically for Chefs & Patissier’s, there are 5 colours to choose from, they are made in the 3 prime colours (red, blue, yellow) with the addition of orange & white.

Colouring white chocolate or fat based preparations can be a challenge, you can use coloured cocoa butters, but it changes the fluidity of the chocolate or can significantly thin down glazes or frozen mousses

Each KoKo Pearl is 0.3g (approx.)
Each individual pearl can colour the maximum* 67g of white chocolate or fat based preparation.
(* as laid out in the regulations of permitted Maximum concentration of dyes or pigments (EC)1333/2008 and EU380/2012) for use in food for sale.
We suggest 6 KoKo Pearls for 400g per mix of white chocolate or fat based preparation.
They have a colour to cocoa butter ration of 5/1

How to use them
White chocolate or fat based preparations
Warm your chocolate or preparation to +40C, add the KoKo Pearl (s) and stir until fully melted
Please allow some time for each pearl to be fully melted, they require a melting temperature the minimum of +40
The colour will be brighter at the beginning (wet stage) as the preparation or chocolate cools down, the colour brightness will fade slightly.
If adding to a warm mix on a planetary mixer, melt them a little on a small piece of silicone or greaseproof paper and scape this into the mixing bowl.
If you choose to put them directly into a planetary mixer before melting, please be aware they can sink to the bottom, it is essential that you manually stir the mix to distribute the KoKo Pearl throughout your mix.
Entrements or Petit Gateaux Glaze
You can add the specified measure of KoKo Pearls directly into a Glaze and then blend with an emersion blender, there is a possibility that they will sink to the bottom, so care should be taken to ensure that they are fully melted and mixed in.
